Cherry, From Los Patios, in La Plata – Huila

Developed by our Research & Development team at our processing facility in La Plata, Huila, Colombia, this lot aims to elevate Castillo’s traditional and robust profile, complementing it with a cherry on top.

We buy de-pulped cherries from various producers in the region, whose farms range from 1,600 – 1,900 m.a.s.l and are an average of 3 Ha in size. Before delivering the wet parchment to Los Patios, these producers handle the first stage of the processing with 12 hour aerobic fermentation in cherry.

Once at Los Patios, our R&D department adds the commercial cherry concentrate, along with our own proprietary solution to the de-pulped coffee. There is an additional fermentation during this stage, but more so the focus is a transfer of the precursors available within our cherry concentrate + proprietary solution.

This fermentation and absorption phase lasts for 2 days until the coffee is drained and dried in mechanical silos for 8 days straight, where it is monitored and rotated constantly to ensure an even drying.

Delving into Co-fermentation Processes

At The Coffee Quest, cup quality is paramount, but bean quality is also paramount, and embryo preservation was one of our key goals while developing processes. We are thrilled to have found success again with Scarlet, while also preserving the physical quality of the beans.

Established in June 2022 as processing facility, Los Patios is more than just a hub—it’s a testament to the commitment to the entire coffee supply chain. Collaborating with local producers and implementing strategic initiatives, Los Patios has become a beacon of innovation.

With the Research & Development Team stationed since April 2023, Los Patios has been pivotal in crafting groundbreaking processes like this one. Under the leadership of Juliana Serna and Alberto Gutierrez, this project focuses on enhancing cupping scores and creating unique profiles, using a proprietary fruit concentrate to complement traditional coffee flavors and being able to replicate them.
