Nestled in the highlands of the Brunca region, at the foothills of Cerro Chirripó (Costa Rica’s tallest mountain), Finca Vista Paraiso spans 15 hectares of fertile volcanic soils. Managed by the Alvarado Fonseca family and processed at their Corazón de Jesús micromill, the farm has quickly gained international recognition through Cup of Excellence placements and reputation for experimental processing. Vista Paraiso won 1st place in the 2025 CoE with their Washed Geisha (90.63 points).
This lot is planted with Centroamericano, a relatively new F1-hybrid between Sarchimor T5296 and wilde Sudan-Rume, valued for its resilience and productivity as well as its exceptional cup quality. The Centroamericano Naturally boasts complex profiles and a very clear and pointy acidity.
GEO Natural is a distinctive multi-stage natural process developed at Corazón de Jesús. It combines anaerobic fermentation, interrupted drying and a long cool reposado, creating a much more controlled evolution of the cherry than in a conventional natural process.
Freshly picked ripe cherries are first placed whole in hermetically sealed containers for around 48 hours at 18–20°C. As the available oxygen is consumed, naturally occurring yeasts and bacteria drive an increasingly anaerobic fermentation inside the intact fruit.
The cherries are then transferred to raised African beds for 4–7 days of partial drying. Rather than continuing directly to full dryness, the process is deliberately interrupted: the partially dried cherries are sealed again for a 10–15 day reposado at 15–17°C. This cooler, extended resting phase is the defining element of GEO Natural, allowing fermentation and maturation to continue slowly while the cherry has already lost part of its moisture.
After reposado, the cherries return to the drying beds and patios for approximately 15 further days of gentle drying. Once stable, the coffee is rested for at least two months, with around four to five months of stabilization considered optimal before milling and evaluation.
The result is designed to combine the fruit intensity and sweetness of a natural process with greater structure, aromatic complexity and clarity, rather than pushing the coffee toward overly dominant fermentation character.
