
Finca Cerro Azul is located in the community of Rio Bonito, State of Comayagua, Honduras, and is managed by Erwin Mierisch, a 32-year-old, fourth-generation coffee grower. The farm consists of 96 hectares of land, sits at an elevation of 1,650 m.a.s.l, and boasts around 250,000 coffee trees in production of the Catuai, Ethiosar, Orange Bourbon, Pacas, Java, and Geisha varieties. This lot is 100% Red Catuaí.
This Catuai Honey lot packs something very special: they start by handpicking the ripest of cherries and selecting out any defects/floaters. Cherries are then de-pulped and placed in fermenting barrels for 72 hours, inoculated with yeast! The parchment is then drained and laid to dry in African beds for around 15, depending on the weather, until reaching the appropriate moisture content.
Erwin Mierisch’s family has been cultivating coffee for a good part of the past century. His grandfather, Dr. Erwin Miersch (Like grandfather, like grandson) still to this day works with him in Finca Cerro Azul, aiding with management.
They acquired Finca Cerro Azul in 2011, and Erwin took the helm of the farm in 2016, transforming the farm into a hub of specialty coffee in Honduras. Erwin leveraged the farm with its special micro-climate and healthy soil, improving quality even further with the implementation of replicable and consistent coffee processing methods
