Finca El Altiplano, from Mozonte, Nueva Segovia

Finca El Altiplano is located in Mozonte, Nueva Segovia, Nicaragua, and is managed by Olman Uriel Sauceda Chavez, a 43‑year‑old producer and experienced coffee cupper. The farm spans 117 manzanas (approximately 82 Ha) at elevations ranging from 1,650 to 1,745 m.a.s.l. Olman cultivates an impressive range of varieties across multiple distinct lots, including Chiroso, Geisha, Sidra, Wush Wush, Pink Bourbon, Red and Yellow Catuai, Pacamara, and various hybrids. The farm is also actively expanding, with new plantings of Orange Chiroso, Orange Geisha, and Bourbon Chiroso added in 2026.

The harvest is entirely manual, ensuring only perfectly ripe cherries are selected. Upon arrival at the mill, cherries are floated and siphoned to remove impurities and lower-density beans. Fermentation is conducted in 69 kg Ecotac bags for precise control, with pH levels monitored and mucilage checked every 12 hours. Drying times vary by process and weather: 10 to 14 days for washed coffees, 15 to 20 days for honeys, and 23 to 30 days for naturals.

From the Cupping Table to the Farm

Olman’s journey into coffee began in 2006, when he started working as a cupper and advisor, helping producers improve quality at a time when specialty coffee was barely established in Nicaragua. Although his grandfather and father were coffee growers for around 50 years, Olman initially took a different path, focusing on the transformation and quality control side of the industry rather than the family farm. It was through his work as a cupper that he fell in love with high-quality coffees and was inspired to have his own farm.

In 2021, he sold his family’s original farm, El Pinavete, which topped out at 1,300 m.a.s.l., and established Finca El Altiplano. He wanted higher elevations to unlock the genetic potential and cup profiles of exotic varieties. Today, the farm is a family operation, with each member handling specific responsibilities.

We began working with Olman and Finca El Altiplano in 2026, and we are excited to keep building this relationship.
