
Isaias Fernandez is a 46-year-old coffee producer located in Las Flores, Santa Barbara, Honduras. His farm, Finca El Ocotillo, spans 10 hectares at 1,720 m.a.s.l. Here, he grows Caturra (35%), Geisha (25%), Parainema (15%), and Pacas (25%) varieties.
Isaias begins his Washed process by depulping cherries daily during harvest and dry-fermenting the parchment for 18 hours. The coffee is then washed four times with abundant water before being dried for approximately 14-17 days in a parabolic solar dryer, with continuous hand-sorting throughout the process to ensure an even drying.
Isaias grew up working alongside his grandfather and father, who were among the first coffee growers in the region. He and his brothers were the right hand that allowed their father to grow the family coffee business. At 20, Isaias moved to the city to work and help support the family. Three years later, his father gifted him a portion of the farm, but he remained in the city, saving money for his eventual return.
By 2010, his brothers had already entered the specialty coffee market with support from Beneficio San Vicente, gaining recognition through the Cup of Excellence. Encouraged by their success, Isaias returned to the farm full-time and began producing specialty coffee in 2014.
