Finca El Rosario is located in San Agustín, Huila, Colombia, and is managed by Cristina Rojas, a 40-year-old, second-generation coffee grower. The farm consists of 6 hectares of land, with 4 hectares dedicated to growing coffee. It sits at an elevation of 1,600 m.a.s.l, and with around 7,000 coffee trees in production of the Caturra, Castillo, and Cenicafe 1 varieties.
Cristina starts all her lots by carefully picking the ripest of cherries, which she then places in the hopper overnight. The next morning, the cherries are de-pulped and placed to ferment in open tanks for 27 hours. Upon washing, the parchment is dried in parabolic driers for around 10 to 12 days, depending on the weather.
Cristina Rojas was born with coffee in her blood. Her parents were coffee growers as well, and she learned everything from them. She inherited the family’s farm, and bought a separate lot, and that is how Finca El Rosario was born.
Now, with more than 16 years behind Finca El Rosario’s helm, Cristina has developed a system for her and her family to produce micro-lot quality coffee, which left us wanting more!
We started working with Cristina and Finca El Rosario in 2024, and we are so thrilled to continue building this relationship.
