Finca El Silencio, from Urrao, Antioquia.

Finca El Silencio is located in Urrao, Antioquia, Colombia, and is managed by Jose Yorley Flores, a 45-year-old, second-generation coffee grower. The farm consists of 7 hectares of land, with 1 hectare dedicated to growing the Caturra Chiroso variety (approximately 5,000 trees) at an elevation of 2,050 masl.

This washed lot is obtained by processing cherries picked the same day, the coffee is de-pulped and left in a concrete fermentation tank for about 6 days, Jose adds water to the fermentation, but he changes this water every day. At the end of the fermentation process, he washes and dries the coffee immediately; he believes it is very important to drain the water right away and leave the coffee to dry in the greenhouse to ensure that no defects appear in the cup. Depending on the weather, his drying process can take 8 to 12 days.

Not a Silent Coffee…

Jose bought Finca El Silencio 24 years ago and married Marta, both from the countryside and keen to continue farming. She came from a region well known for coffee, Betania, and he came from Urrao but didn’t know much about coffee. He decided to learn the trade from his wife and was introduced to specialty coffee by his neighbors, who advised them to grow Caturra Chiroso. 

Marta helps a lot on the farm, she helps with the harvest and is very involved in the processing of the coffee. She is always very attentive to the drying process, which requires a lot of time moving the parchment and making sure that the coffee is dried to the right moisture content (and not too fast!). Their two children, Sergio (22) and Milena (23) have moved to the city to pursue different careers, but they often return to the farm to see their parents and enjoy the tranquility and spectacular views of Finca el Silencio.

We started working with Jose and Finca El Silencio in 2023, and their craftsmanship is something to behold!
