Finca La Bonita, from Páez, Cauca
Finca La Bonita is located in Páez, Cauca, Colombia, and is managed by Juan Dabid Embus. The farm covers 10 hectares at 1,900 m.a.s.l., where he grows Bourbon Aruzy (6,000 trees), Colombia (5,000 trees), and Pink Bourbon (3,000 trees).
Juan Dabid starts his lots by careful selection of the cherries, followed by depulping. The parchment is then fermented for 48 hours, washed with abundant water and laid to dry in marquesina for 10 – 15 days, depending on the weather.
Growing Variety at Altitude
Finca La Bonita is situated in the highlands of Páez, Cauca, a region known for its volcanic soil and consistent climate. Juan focuses on growing several varieties, each selected for its quality potential.
