

Finca La Granja is located in Vereda San José, Santa María, Huila, Colombia, and is managed by Guiliar Pérez Cuéllar, a coffee producer born and raised in the region. The farm spans 3 hectares at 1,850 m.a.s.l., where Guiliar cultivates over 3,000 Bourbon Rosado trees alongside traditional varieties.
Guiliar’s process begins with hand-picked ripe cherries, which are then floated, and left to ferment whole in open tanks for 24‑hour. The cherries are then de-pulped and fermented in the same tanks for an additional 48 hours, before being washed thoroughly. The parchment is then laid to dry in marquesinas for 8 to 12 days, depending on the weather.
Guiliar (pronounced like William) was born and raised in Santa María, where coffee has always been part of his life. He started managing his father-in-law’s coffee farm, but he saved up over the years in order to buy his own farm. So finally in 2016, he bought a piece of his father-in-law’s farm, as well as a neighbouring lot, and Finca La Granja was born. He began planting only 1,000 Pink Bourbon trees, and has expanded his own specialty production ever since.
We began working with Guiliar and Finca La Granja in 2026, and we are excited to keep building this relationship.
