
Finca La Toronja is located in Parroquia San Antonio de las Aradas, Quilanga, Loja, Ecuador, and is managed by Teodomiro Jiménez, a 52-year-old coffee producer. The farm spans 5 hectares at 1,750 m.a.s.l., with 3 hectares dedicated to coffee. Teodomiro grows a field blend of mainly Caturra, Typica, Catucai and Sarchimore, as well some Typica Mejorado.
Teodomiro’s process begins with harvesting only fully ripe cherries. He employs a distinctive double fermentation: first, cherries ferment whole in plastic tanks for two days, then after depulping, the coffee ferments again for 48 hours. After washing and draining, the coffee is dried for 15–20 days in shaded greenhouse structures, with constant movement to ensure an even drying.
Teodomiro has lived among coffee since childhood, inheriting not only land but also coffee-growing knowledge. When coffee leaf rust devastated Loja’s coffee trees in 2012, he responded by replanting with mostly rust-resistant Sarchimor. By 2018, driven by a desire for better quality, he began introducing Typica Mejorado, an incredible variety that started making noise in the region.
