Finca Los Guayabos, from Gaitania, Tolima

Finca Los Guayabos is located in Vereda Puerto Limón, Gaitania, Tolima, Colombia, and is managed by Diana Paola Alviz, a 35‑year‑old coffee producer who inherited the farm from her father‑in‑law. The farm spans 2 hectares at 1,750 m.a.s.l., where Diana cultivates Bourbon Rosado exclusively.

Diana’s process begins with selective harvesting of ripe cherries, which are then floated and de-pulped the following day. The pachment is then placed in sealed barrels to ferment for 80 hours, before being washed and laid to dry in a marquesina for 18 to 20 days, depending on the weather.

From Commercial to Specialty, with Family

Diana learned coffee cultivation from her parents, who also taught her about cattle (but she says she never really had a knack for it). However, she found her true calling in coffee. She has managed Finca Los Guayabos for over a decade, but it was only four years ago (in 2022) that she and her husband, Arley Muñoz, made the decision to shift from commercial to specialty. Motivated by the potential for better prices, they dedicated themselves fully to specialty.

We began working with Diana and Finca Los Guayabos in 2026, and we are excited to keep building this relationship.
