Finca Los Lagos, from Inzá, Cauca
Finca Los Lagos is located in Inzá, Cauca, Colombia, and managed by Sergio Pillimue, a 32-year-old, second-generation coffee grower. The farm consists of 4 hectares of land and sits at an elevation of 1,800 m.a.s.l, with around 10,000 coffee trees in production of the Caturra, Red Bourbon and a “new” rising variety from the region of Inzá: Mountain Bourbon (Borbón de Montaña).
Sergio starts his lot by carefully handpicking the ripest of cherries and removing all floaters, leaving the cherries in the hopper for two days before de-pulping them. The parchment is then left in tiled tanks for 48 hours to ferment, washed once and placed to dry in raised beds for 12 – 15 days, depending on the weather.
Keeping His Father’s Legacy
Sergio grew up among coffee trees and the country side, but at an early age he left to the capital to seek a better future. It was his Father passing in 2016 that brought him back to his roots; prior to this, his Father decided that Sergio (amongst all the siblings) would be in charge of managing the farm… and with this, he had a reputation to upkeep!
The eldest of four, Sergio took to the helm Finca Los Logos, seeking to grow specialty coffee in a region where opportunities can be scarce. And we are thrilled to share that his efforts have paid off: his coffee is exceptional and his attention to detail is on par with the best on the region!
