
Finca San Sebastian is located in the vereda of La Lindosa, Palermo, Huila, Colombia, and is managed by Carlos Perdomo: a 39-year-old, second-generation coffee grower. The farm consists of 4 hectares of land and sits at an elevation of 1,800 masl, with over 16,000 coffee trees of the Pink Bourbon and Geisha varieties.
Carlos starts his lot by carefully handpicking the ripest of cherries and removing all floaters before de-pulping, all on the same day of harvest. The parchment is then left in tiled tanks filled with water for up to 36 hours to ferment, with constant movement throughout the day. Upon washing, the coffee is left to dry in raised beds for 10-12 days, depending on the weather.
Carlos and his family have been growing coffee for generations in Finca San Sebastian. The farm has been their home and source of income for all that time, and now with Carlos on the helm, they took a turn into Specialty – pursuing those exclusive varietals.
His father and brother help them with the daily chores of the farm, with all the administrative labor being relied on by Carlos.
