
La Plata Natural, from La Plata, Huila
La Plata Natural Lot comes from our own processing facility, Los Patios, in La Plata, Huila. We buy cherries from various producers in the region, whose farms range from 1,600 to 1,900 m.a.s.l. and are an average of 3 Ha in size. This lot is comprised of traditional varieties grown in the region, such as Castillo, Colombia, and Caturra.
Once the cherries arrive at Los Patios, they are floated, hand-selected, and fermented in sealed bags for 24 to 36 hours. After that, cherries are left in punnets to undergo an oxidation phase for 2 days straight. Finally, the cherries are drained and dried in a mechanical silo for 4 days at a constant temperature of 38°C until reaching a moisture content of 10-11%.

At The Coffee Quest, cup quality is paramount, but bean quality is equally important, meaning embryo preservation is one of our key goals while developing processes. We are thrilled to have found success again with our La Plata Natural process, while also preserving the physical quality of the beans.
Established in June 2022 as processing facility, Los Patios is more than just a hub—it’s a testament to the commitment to the entire coffee supply chain. Collaborating with local producers and implementing strategic initiatives, Los Patios has become a beacon of innovation.
With the Research & Development Team stationed since April 2023, Los Patios has been pivotal in crafting groundbreaking processes like this one. Under the leadership of Juliana Serna and Alberto Gutierrez, this project focuses on enhancing cupping scores and creating unique profiles, using a proprietary fruit concentrate to complement traditional coffee flavors and making them replicable.
