Manikliyu Honey, from Kintamani, Bali

The Manikliyu Honey lot comes from Manikliyu Village, Kintamani, Bali, Indonesia, and is produced by Mudar, a coffee grower whose family has cultivated coffee for generations. The farm sits at 1,400 meters above sea level on fertile volcanic soil, where Mudar grows the Cobra variety—a lineage tracing back to Colombia and Brazil. This lot is processed using the honey method, which retains some mucilage during drying to develop sweetness and body.

For this lot, ripe cherries are hand-picked and selected for defects before being pulped with the mucilage left intact to ensure maillard reaction during drying. The coffee is then dried in well-aerated greenhouses with careful monitoring to ensure even drying, resulting in a cup with notes of stone fruit, molasses, and full body.

Volcanic Soil, Generations of Care

Coffee farming has been part of Mudar’s life through his grandfather and the generations before him. His farm sits just an hour from Heqa’s processing facility in Buleleng, North Bali—close enough that cherries are delivered fresh at peak ripeness, ready for post-harvest processing. At Heqa’s Bali-based production station, research, processing, and milling work in harmony to unlock the best flavor qualities of Indonesian coffee through precise, controlled fermentations.

Heqa Coffee was founded in 2024 by Alican Erdogan, Chris Kwong, and Jeremy Nathaniel with a mission to position Indonesia as a producer of delicate, sweet, complex specialty coffees. They work with a fixed group of six producers in Bali, including Mudar, enabling close relationships and greater visibility for farmers in the specialty market. Bali’s volcanic soils and diverse microclimates provide the foundation for coffees that differ from typical expectations of Indonesian flavor profiles.
