Ruben Dario Lopez, from Santa Barbara, Honduras

Ruben Dario Lopez is a dedicated third-generation coffee producer located in Las Vegas, Santa Barbara, Honduras. His farm spans 0.4 hectares at 1,700 m.a.s.l. where he grows 100% Pacas variety.

Ruben begins his Washed process by depulping cherries each afternoon, and dry-fermenting the parchment for 12 hours. The coffee is washed four times with abundant water before being dried for approximately 20 days in a parabolic solar dryer, with continuous hand-sorting throughout the drying phase to ensure excellence.

From School Yard to Sun-Drying Beds

Ruben’s coffee journey began in childhood, helping his father in the fields after school. At 20, he moved to Peña Blanca to work in a vegetable store, but his heart remained in coffee.

In 2012, he and his father pooled their resources to purchase land and plant their first coffee trees together. By 2016, their hard work evolved into specialty coffee production, marking the start of a shared pursuit of quality.

We connected with Ruben through Beneficio San Vicente, have been working with his coffee since 2024, and we are excited to showcase his coffee and build this relationship!
