Finca Elite is located in Mozonte, Nueva Segovia, Nicaragua, and is managed by Olman Uriel Sauceda Chávez. The farm spans 20 manzanas in total, with 15 manzanas (approximately 10.5 hectares) dedicated to coffee at elevations ranging from 1,450 to 1,600 m.a.s.l. Olman cultivates a wide range of varieties: Geisha (15,000 plants), Pacamara (18,000), Catuai (12,000), Maracaturra (9,000), Pink Bourbon (3,700), Chiroso (3,700), and Catimore (3,500).
The harvest is entirely manual, ensuring only perfectly ripe cherries are selected. Upon arrival at the mill, cherries are floated in a siphon to remove impurities and lower-density beans. For washed coffees, fermentation takes place in 69 kg Ecotac bags, allowing for precise pH monitoring and mucilage checks every 12 hours. Drying times vary by process and weather: 10 to 14 days for washed coffees, 15 to 20 days for honeys and semi-washed, and 23 to 30 days for naturals.
Olman’s journey into coffee began in 2006, when he started working as a cupper and advisor, helping producers improve quality at a time when specialty coffee was barely established in Nicaragua. Although his grandfather and father were coffee growers for around 50 years, Olman initially took a different path, focusing on the transformation and quality control side of the industry rather than the family farm. It was through his work as a cupper that he fell in love with high-quality coffees and was inspired to have his own farm.
Finca Elite was born as an experimental project focused on exotic varieties. It is managed by a family partnership that shares the same vision, love, and passion for exotic coffees, with each member taking on different roles. Their approach has already yielded remarkable results: in 2025, the farm won first place in the Cup of Excellence in its very first year of participation. In its second year, it secured tenth place.
We began working with Olman and Finca Elite in 2026, and we are excited to keep building this relationship.
