
Finca El Filo is located in the village of El Cedral, in Las Vegas, Santa Barbara, Honduras, and it is managed by Olvin Moreno, a dedicated coffee producer. The farm spans 1.25 hectares of land at 1,600 m.a.s.l. where Olvin focuses exclusively on the Pacas variety.
Olvin begins his Washed process by depulping cherries each afternoon, then fermenting the parchment dry for 24-48 hours depending on cherry ripeness. The coffee is then washed four times, pre-dried on African beds with manual defect removal, and finally dried in a parabolic solar dryer for approximately 20 days, depending on the weather.
Olvin grew up as his father’s right-hand man, learning coffee cultivation from one of El Cedral’s community founders who began growing coffee in the 1970s. In 2007, he inherited part of the family’s “El Filo” farm, preserving its original name, and expanded it in 2011 by purchasing adjacent land.
That same year marked his transformation into specialty coffee production. With support from San Vicente mill and his brothers, Olvin prepared his first micro-lot in 2011 and has dedicated his entire harvest to specialty coffee ever since.
