
Finca El Pedrero is located in Tierra Colorada, La Paz, Honduras, and is managed by Carlos Ernelio Ortiz, affectionately known as “Don Nelo,” alongside his son Edy and two grandsons (that’s three generations!). The farm sits at an extreme elevation of 1,780 m.a.s.l., where Don Nelo grows the prized Pink Bourbon variety.
This a traditional washed lot. Ripe cherries are hand-picked and transported through the farm via an innovative gravity-fed PVC pipe system, directly to the wet-mill. The cherries are de-pulped and fermented in concrete tanks for 8 to 12 hours, before being washed with abundant water and the aid of wooden paddles. The parchment is then spread in thin layers on patios and moved several times a day for a slow, uniform drying of around 10 – 13 days, depending on the weather.
Don Nelo purchased Finca El Pedrero with a clear vision: the extreme elevation and cold climate were the perfect combination for growing some of the world’s most sought-after coffees, including Pink Bourbon. However, the quality came at a price… an access road so steep that carrying coffee up or down by mule was a titanic and dangerous task.
That challenge sparked Don Nelo’s ingenuity. At the highest point of the farm, where the best cherries grow, the family installed a barrel connected to a network of PVC pipes that carries the coffee downhill by gravity. When cherries are harvested, they travel quickly through the tubes, arriving fresh and undamaged at the bottom, where family members receive them directly in bags.
