
Finca El Tambo is located in the village of Guintar, Anzá, Antioquía, Colombia, and is managed by Daniel Caro Lopez: a 29-year-old, second-generation coffee grower. The farm consists of 33 hectares of land and sits at an elevation of 2,200 masl. The farm has over 5 hectares of land dedicated to growing the exciting Chiroso variety (~13,000 trees), and they also recently planted some Geisha trees (~3,000 trees).
Daniel starts his lot by carefully handpicking the ripest of cherries, and removing all floaters prior to de-pulping. The parchment is then left in tiled tanks filled with water for up to 80 hours to ferment, with constant movement throughout the day. Upon washing, the coffee is left to dry in raised beds for 15-20 days, depending on the weather.
Daniel grew up surrounded by coffee and milk cattle. His family has been growing coffee since he was little, and learned the craft from his father, which at the time, focused solely on traditional or conventional coffee growing.
However, they learned from their close relatives in Urrao about the Chiroso variety… and got curious! They decided to try their luck with Chiroso and that is how their journey in Specialty began. Their initial trials did not offer the best results since their original farm was at a lower elevation, with a much warmer temperature than their cousin’s farm in Urrao.
But they were determined to make it work with this exotic variety, and bought Finca El Tambo; now at a higher elevation and a cooler climate, their Chiroso started performing very well and has since made this farm, El Tambo, their home. We started working with Daniel and Finca El Tambo since 2024, and we look forward to building the relationship!
