
Finca La Quebrada is located in the village of El Cedral in Las Vegas, Santa Barbara, Honduras, and it is managed by Dolmin Moreno, a 36-year-old fourth-generation coffee producer. The farm spans 1.4 hectares of land at 1,580 m.a.s.l. where Dolmin grows an impressive selection of Gesha (50%) and SL-28 (50%) varieties.
Dolmin begins his Washed process by carefully picking cherries at peak ripeness. The cherries are depulped and dry-fermented in concrete tanks for 18 hours, then thoroughly washed to remove all mucilage. The parchment is then pre-dried on raised beds for 8 hours with manual sorting to remove defects, then finished in a parabolic solar dryer for approximately 14 days, depending on the weather.
As a fourth-generation producer, he grew up working alongside his father on the family farms. In 2005, seeking new opportunities, he made the difficult decision to leave for the United States to work and save money. His perseverance paid off when, in 2010, he purchased property in the high mountains of Honduras, now known as Liquidambar Farm.
The high elevation climate made coffee production difficult, requiring more years than normal of patient work before his first harvest!
