
Finca Los Tabares is located in Urrao, Antioquia, Colombia, and is managed by Yeferson Hernández, a 22-year-old, third-generation coffee grower who carries on his family’s agricultural legacy with pride. The farm sits at an elevation of 1950 m.a.s.l. and consists of 7.5 hectares of land and around 5,000 coffee trees in production, all of them being Caturra Chiroso.
He starts his Washed lot by processing the coffee the same day he hand-picks the cherries. It is de-pulped and then placed in sealed barrels for up to 5 days, all this process without the use of water. Once fermentation is done, he proceeds to wash and place the parchment to dry in a greenhouse dryer, for around 10 to 15 days, depending on the weather.
His father and grandfather only produced commodity coffee, Yeferson is the first to explore the world of specialty! However, he is committed to innovating and adding value to his crop; constantly willing to learn new processes and ways to improve to make every sip of his Chiroso a memorable experience.
We are sure of the potential of Yeferson and his farm; his commitment to producing the best quality Chiroso coffee is present at the cupping table, and seeing him making plans to plant an additional 6,000 coffee trees to help with quantity speaks of his will to stand out in the region.
