
Finca Quebrada Onda is located in the community of Quebrada Onda, Villa de San Antonio, Comayagua, Honduras, and is managed by Josué Isaac Mejía, a civil engineer whose passion for coffee rivals his professional career. The farm sits at approximately 1,776 m.a.s.l., where Josué cultivates the exotic Bourbon Ají variety.
This is a traditional washed lot. Ripe cherries are hand-picked and delivered to the wet mill in plastic bags. The cherries are de-pulped and fermented in concrete tanks for 10 to 14 hours, before being washed three times with the aid of wooden paddles. The parchment is then drained and spread in thin layers on raised beds and sun-dried with constant movement for 10 to 14 days, depending on the weather.
Josué Isaac Mejía lives between two worlds: some days he supervises civil construction projects; while other days he works his coffee farm with the dedication his father, Don Ismael, instilled in him. Don Ismael dedicated his life to traditional coffee farming, bringing his son to the fields from a young age to teach him love and respect for the land. When Josué came of age, his father entrusted him with the farm. With generational change and new knowledge, Josué improved both management and production, achieving exceptional quality.
