
Rincón del Sabor is a curated communal lot from smallholders in Santa Bárbara, Honduras, near the iconic Lake Yojoa. The farms range from 2 to 3 Ha in size, and sit at an average elevation of 1,350-1,600 m.a.s.l. This lot comprises some of the most well-known varieties from Honduras: Pacas (30%), Catuai (20%), Bourbon (10%), IHCAFE 90 (20%), and Parainema (20%).
This washed lot begins by carefully hand-picking the ripest of cherries. Once floated to remove any defects, the cherries are depulped, dry-fermented for 20 hours, and washed to remove any mucilage. The parchment is then laid out to dry in parabolic dryers or concrete patios for 10–14 days, depending on the weather.
Santa Bárbara Mountain, declared a National Park in 1987, rises to 2,774 m.a.s.l., making it the second-highest peak in Honduras. Its vast virgin cloud forest is rich in biodiversity, and it is home to a wide array of flora, fauna, and exotic bird species—including the Quetzal and the Colibrí Esmeralda.
On top of that, Lake Yojoa serves as an impressive natural reservoir of volcanic origin. It hosts an impressive biodiversity of aquatic life and is home to 50% of all bird species found in Honduras.
The farms are located between these two havens, allowing the coffee trees to develop under a fantastic microclimate. The result? A consistent and flavorful cup profile year after year.
