Diego Bermudez drives the success of Finca El Paraiso, a family-operated farm in Piendamo, Cauca, Colombia. Spanning 3 hectares and additional El Paraiso farms, they cultivate Castillo, Pacamara, Geisha, and Laurina varieties at 1930 meters above sea level.

Finca El Paraiso employs a meticulously controlled process, emphasizing advanced fermentation and washing techniques. Diego’s focus on industrial-style processing prioritizes cleanliness and a controlled environment.

The farm benefits from a good microclimate, facilitating slow bean ripening and the accumulation of essential sugars for fermentation. Diego’s expertise extends to a unique application of microorganisms, double fermentation method, coupled with a thermal shock washing technique. This meticulous approach aims to have compounds pass through the parchment layer and “fix” inside the bean. 

The drying process ensures final quality through their proprietary technology, employing controlled air recirculation at low temperatures. Diego’s unwavering commitment to craftsmanship continues to yield exceptional results at Finca El Paraiso.

Diego's Scientific Approach

Diego Samuel Bermudez Tapia, the driving force behind Finca El Paraiso, embarked on a journey in 2008 to establish a family project dedicated to coffee cultivation. With a strong determination to address challenges in the coffee sector, Diego’s pursuit of innovation and the integration of technology shaped his foundation. His scientific approach and commitment to excellence have resulted in over 10 replicable post-harvest protocols that can be tailored to produce specific flavor profiles.

Diego’s passion for controlled fermentation led him to explore the development of compounds naturally present in coffee cherries during the fermentation process. By co-fermenting microorganisms (for example; lactic acid bacteria and yeasts) with the coffee and carefully managing factors such as temperature, pH, and pressure, he harnesses these compounds to enhance flavors and aromas. Diego collaborates with the University of Antioquia on long-term projects to study compound development during fermentation. At Finca El Paraiso, Diego and his family’s relentless pursuit of innovation, commitment to quality, and meticulous attention to detail continue to shape their outstanding coffees.
