
Finca El Mirador is located in Palestina, Huila, Colombia, and managed by Octavio Rueda, a 49-year-old, third-generation coffee grower. The farm consists of 15 hectares of land, with 6 hectares currently dedicated to growing coffee. It sits at an elevation of 1,830 m.a.s.l, with around 30,000 coffee trees in production, with varieties ranging from Pink Bourbon, Red Bourbon, and Castillo.
Upon arriving to the wet-mill, the cherries are left overnight to ferment in the de pulper’s hopper, ready for the next morning’s depulping phase. The wet parchment is then de-pulped and placed in tanks submerged in water for 80 hours, before being placed to dry in raised beds for approximately 16 days, depending on the weather.
Located in Los Olivos “vereda”, in the heart of Huila, Finca El Mirador has stood for generations. Octavio actually learned the craft from his grandparents and still carries it with him to this day.
A Father of six, Octavio taught everything he knew about growing coffee to his sons and daughters, leaving him to take care of the processing and drying and his sons all the rest of the chores (actually, coffee growing is so deep within the family, that the eldest daughter of Octavio is a coffee roaster and cupper, living in Bolivia!).
2024 will mark our 1st year working with Finca El Mirador, and we are extremely excited for future harvests!
