
Finca El Rosal is located in Vereda Pavón, Urrao, Antioquia, Colombia, and is managed by Hermilda Zapata Vargas, a lifelong coffee producer. The farm spans 11 hectares, with 3 hectares dedicated to coffee at 1,900 m.a.s.l. Here, Hermilda has approximately 4,000 trees in production, mostly Chiroso along with some Caturra, and some more Chiroso and Pink Bourbon on the way! This lot is 100% Chiroso.
Hermilda begins her processing by harvesting only ripe cherries, which she then hand-selects, and depulps the following day. The coffee ferments for 4 to 5 days in open plastic barrels, with regular stirring. After washing, the parchment is dried in a marquesina for approximately 8-10 days, depending on the weather.
Finca El Rosal was inherited by Hermilda and her family in the 2000’s, but was originally used for cattle and commercial coffee. She has grown coffee for most of her life, but it was not until 2023 that she heard about specialty coffee.
She decided to give Chiroso a try, and never looked back. Nowadays, Finca El Rosal has 1 hectare of coffee in production, and 2 hectares on the way, with the rest of the farm still dedicated to cattle, as well as avocado, beans and “lulo” fruit.
We began working with Hermilda and Finca El Rosal in 2026, and we are excited to keep building this relationship!
