
Finca San José is located in Vilcabamba, Loja, Ecuador, and is managed by Ángel Cumbicos, a 76-year-old coffee grower whose life has been intertwined with coffee for over three decades. The farm sits at 1,650 m.a.s.l. and spans 2 hectares of coffee, of the Red & Yellow Bourbon, Catuaí and Criollo varieties.
Ángel begins with a meticulous double fermentation—cherries are fermented for 24 hours, then de-pulped and fermented again for 48 hours. Afterward, the coffee is washed and dried for 12 to 15 days in a marquesina (covered structure), depending on the weather.
Vilcabamba, derived from the Quechua word Huilcopamba (“Valley of Longevity”), is famed for the remarkable vitality of its residents—a phenomenon scientists attribute to the region’s pristine rivers, temperate climate, nutrient-rich foods, and, of course, its coffee. Fun Fact: they say if you drink the water, you will live to 120 years old!
Ángel Cumbicos embodies this spirit of endurance. For 30 years, he and his late wife, Fanny Macas, poured their hearts into Finca San José, raising four children and three grandchildren among the coffee trees.
For over a decade, he has collaborated with Capamaco Trading to refine every stage of production, from farming to post-harvest processing.
