
Finca Santa Catalina is located in Vereda Pavón, in Urrao, Antioquia, Colombia, and is managed by Héctor Londoño, a 50‑year‑old, second-generation coffee producer. The farm spans 4 Ha, with 2 Ha dedicated to coffee at 1,800 m.a.s.l. Héctor currently has 1,600 Chiroso trees, and 400 trees of a mix of Castillo, Caturro, and Colombia, and this year he planted an additional 2,000 Chiroso trees! This lot is 100% Chiroso.
Héctor’s processing method begins with harvesting ripe cherries, which he ferments for two days before depulping. The wet parchment is then submerged in open tanks for another three days, with daily stirring before being washed. The parchment is then laid to dry in marquesinas for 8 to 12 days, depending on the weather.
Finca Santa Catalina was inherited by Hector’s wife from her family in 2016, and they have managed it every since.
They have always grown a small amount of traditional coffee, but their main crop had been “granadilla” or passionfruit. Growing up, Héctor’s father taught him about coffee, and he has always preferred coffee growing over other crops.
In 2020, Héctor heard about Chiroso from a friend, and the following year, he planted his first plot of the variety, shifting towards specialty processing ever since.
We began working with Héctor and Finca Santa Catalina in 2026, and we are excited to keep building this relationship!
