
The Guji Raro Boda lot comes from the Raro Boda Wet Mill, located in the Uraga district of the Guji Zone, Ethiopia, at elevations ranging from 1,900 to over 2,300 meters above sea level. The station serves approximately 250 to 700 smallholder farmers per season from the Raro Boda kebele, who cultivate indigenous landrace varieties including Wolisho, Dega, and Kurume, alongside JARC selections 74110 and 74112. The extreme elevation of Uraga brings cool temperatures that slow cherry maturation, concentrating natural sugars and producing exceptionally dense beans with high sweetness and complex acidity.
For the Washed process, ripe cherries are selectively hand‑picked and delivered to the station. Using a Penagos eco‑pulper, the cherries are depulped and fermented underwater in ceramic‑tiled tanks for 48 to 72 hours—tiled tanks prevent bacteria accumulation, yielding a cleaner cup. The parchment is then washed in channels, sorted by density, soaked in clean spring water, and dried slowly on raised African beds for 10 to 14 days, shielded during intense midday sun. The result is a bright, sparkling cup with jasmine, peach blossom, and citrus notes.
For the Natural process, whole hand‑sorted cherries are spread in thin layers across raised bamboo drying beds and turned regularly for 15 to 21 days until reaching optimal moisture levels of 10.5‑11.5%. This method produces a fruit‑forward profile with mango, raspberry preserves, and dark berry jam, with a syrupy, rich mouthfeel.
Operations and quality control at Raro Boda are overseen by Q‑Grader Medhin Tamiru, an experienced cupper and national judge for the Cup of Excellence competition. Established around 2018, the wet mill has undergone significant investment under SNAP’s oversight to refine processing efficiency and cup cleanliness.
SNAP Trading and Industry PLC (SNAP Specialty Coffee) was established in 2008 by entrepreneur Negusse Debela Weldyes. Originally known for his success in the IT sector, Negusse transitioned into specialty coffee after discovering high‑end pour‑over coffees in the United States. SNAP has quickly risen to become one of Ethiopia’s premier exporters of high‑scoring, traceable micro‑lots. They manage multiple wet mills across southern Ethiopia, including key sites in Guji and Gedeo, and operate an in‑house dry milling facility in Dukem, giving them strict quality control over defect sorting and moisture retention. Beyond processing, SNAP has built schools, improved rural roads, and established healthcare clinics for smallholder communities in the region.
