
The Mitima lot comes from the Metima Washing Station, located in the Maketa area of Sidama Bensa, Ethiopia, at elevations ranging from 2,100 to 2,300 meters above sea level. The station serves 504 smallholder farmers from the surrounding communities of Maketa, Shigasho, and Genet. This lot is available in two processed forms: Natural and Honey. The primary variety is JARC 74158, known for its intense floral aromatics and stone fruit qualities, along with other JARC varieties including 74112 and 74110.
For the Honey process, fresh red cherries are pulped to remove the outer skin, leaving some mucilage intact to develop sweetness and complexity. The coffee is then dried on raised beds for 12 to 13 days, with careful monitoring to balance flavor and moisture before storage and export.
For the Natural process, ripe cherries are hand‑picked and delivered to Metima Station, where they are sorted and floated to remove defects. The cherries are then spread on raised beds and sun‑dried for 18 to 21 days, with careful turning and moisture monitoring to ensure even drying before storage and export.
The name Mitima reflects the heart and spirit of the Sidama coffee tradition—a name that speaks to the dedication woven into every stage of the coffee’s journey, from the hands that tend the trees to the care taken in processing. Like its name, Mitima is a reminder of the heart behind every harvest—the commitment, care, and connection that bring coffee from origin to cup.
Established in 1996 as producers, Daye Bensa has lived through all the turmoils that coffee growing and exporting entail in the region. Nowadays, they are a reference of excellence and resilience in Ethiopia and work with various communities of out‑growers from whom they receive cherries. They work with multiple washing stations in the Bensa, Sidama area, including some that they own. Daye Bensa is no stranger to quality and has learned how to produce high‑quality coffees: in 2020, they won 7th place in the COE, in 2021 8th place, and in 2022, 2nd place!
