Gaitania Natural is our profile sourced from smallholder farmers in and around the communities of Gaitania, Santiago Pérez, and Planadas in southern Tolima, Colombia. These farms are located between 1,600 and 2,100 meters above sea level, benefiting from ideal weather and fertile volcanic soil. Producers deliver their cherries to either La Roca Estate or Tres Rayas Coffee for drying. Depending on availability, the Gaitania Natural lot can come from either La Roca Estate or Tres Rayas, while maintaining a consistent flavor profile.
The cherries are sorted, floated, and dried naturally on raised beds for up to three weeks, with constant movement and careful humidity control. Whether processed at La Roca or Tres Rayas, the lot keeps a consistent cup profile that reflects the unique qualities of the Gaitania region.
The most common varieties grown include Caturra, Typica, Castillo, Colombia, and Bourbon. In recent years, producers have also started cultivating more exotic varieties such as Geisha and Wush Wush.
La Roca Estate — led by award-winning producer Jorge Elías Rojas — and ASOPEP are among the most established coffee associations in Tolima. Tres Rayas Coffee is a newer association of smallholder farmers from the same region, quickly growing in impact. It holds Organic, Fairtrade, Rainforest Alliance, and UTZ certifications, and promotes sustainability by turning organic coffee waste into compost for local growers.
We began working with ASOPEP in 2018 and extended our collaboration to La Roca and Tres Rayas in 2021. This Gaitania lot reflects these partnerships — consistent, traceable, and rooted in a high-potential coffee region.
