
Aricha Idido Anaerobic Natural, from Ethiopia
The Aricha Idido Anaerobic Natural Lot is produced at the Aricha Washing Station station in Yirgacheffe, Ethiopia and managed by our partners SNAP Specialty Coffee. Approximately 800 farmers from the region deliver cherries to the washing station and their farms range from 2 to 3 Ha in size, at an average elevation of 2,000 – 2,100 m.a.s.l. This lot consists of a field blend of various Ethiopian Heirlooms.
Once the cherries arrive at the Aricha Station, they sort them, float them, and measure the Brix degrees (>23°) to ensure only the ripest of cherries are used for this process. After this, the cherries are left to dry in African beds for 48 hours, before being thrown into plastic barrels to kickstart the Anaerobic fermentation for 96 hours. The cherries are then laid to dry for a final time, for 20 – 25 days, depending on the weather.

It is within their purpose to improve the livelihood of supporting farmers, and last year their team of agronomists trained more than 6,000 farmers in land and nursery managemen, and climate-smart agriculture through crop diversification and intercropping.
