Ethiopia, Yirgacheffe: Tulise Anaerobic

Tulise Washing Station is a new location for The Coffee Quest. The site is located in Gedeo Zone in Gedeb. The cherry this station uses is produced by smallholders farmers from the villages; Idido, Cherbenta, Wachota and Gerbota. As usual in Ethiopia, these a small scale producers who have a mixed farm for both cash and food crops. The average elevation of the farms lies at around 2000 Meters Above Sea level on sandy loam in a semi-forested environment, and harvest takes place between October and December. Cherry variety is Mixed Heirloom /  Ethiopian Land Race Varieties.

Processing the Tulise Anaerobic

The Tulise Anaerobic is a typical Natural Dry Anaerobic Coffee. This technique is the most straight forward, and doesn’t require the fermentation tank to be filled with clean water which is sometimes a logistical challenge in Ethiopia. If the station staff manages the fermentation carefully, dry fermentation is completely safe from over fermentation.

In this case, SNAP staff selected cherries with BRIX of over 18 points so they know the fermentation will kick off without an issue. The cherry is of course sorted on impurities and floated for defects. to ensure high quality input. Then the fresh and sorted cherry is put in fermentation vessels and dry fermented for 110 hours. After fermentation, the cherries are dried for around 23 days in a semi-shaded environment.
